Endivia / Endivias
(Cichorium endibia)
Endivia, Endivias, Endivias, Endibia, Endibias
The endives have a problem with the spelling since half of them are written with "v" and the other half with "b". The dictionary of the Royal Academy accepts both and defines it as a "Smooth variety of endive, of which the head of tender and pale leaves is consumed".
Endive is native to the Mediterranean. It is a variety of the bitter chicory (Cichorium intybus). They belong to the Compositae family. There are wild chicories, but the ones we eat are artificially cultivated using the Witloof method (they are kept without light to make them more tender and white).
The wild variety has green leaves and curly leaves. They are harder and more bitter. Currently, they are also being treated artificially and they are bleached, although they never lose their bitter taste.
