alcachofa.jpgThe artichoke has Arabic origins. The artichoke originates from the Mediterranean coast, probably from Sicily or Egypt or the Canary Islands.

According to mythology, it is said that the god Jupiter fell in love with Cynara, a beautiful blonde (ash blonde) girl, who rejected him and to annoy her he decided to transform her into Cynara Scolymus: an artichoke.

It is known that the Romans and the Greeks already consumed it, but it is thanks to Catherine of Mediccis, who loved them, that during the Middle Ages and introduced it in the Italian court. Despite the belief that the artichoke was an aphrodisiac and it was not good to consume it, she continued to do so and made the doctors accept it. At that time it was very expensive and was considered rich people's food.
In America the artichoke was introduced by the French in Louisiana and by the Spanish in California. It also spread to Chile and the Argentinean Pampas.

Artichokes belong to the Asteraceae or Compositae family and to the Cynaras genus. They need a warm climate and are a seasonal plant (biannual and triannual). It can reach 1-1.5 meters in height. It grows in calcareous, rich, neutral, deep and warm soils.
