Spinach originated in Persia. It was introduced in Spain by the Arabs in the 11th century and in Europe with the Crusades, during the Middle Ages. It spread and became popular during the Renaissance and it was Catherine de Mediccis, who loved it, who introduced it to the French Court when she married the King of France in 1533. When we talk about Spinach Florentine style, it comes from the fact that Catherine's hometown was Florence and she brought the recipe and cooks from Italy.
